Chili and cold weather go hand in hand. It's a tasty bowl of goodness with enough spice to clear the sinuses and warm the cockles of the heart. Eaten by itself topped with all your favorite accoutrements or laid bare on a bed of rice, it's a classic turnkey dish that begs to be made en mass and served every day until it's gone... or freeze for later enjoyment!
Here's a twist on the traditional recipe forsaking the beans and making it Keto friendly. I'm not a rigid Keto dieter, I simply prefer this version as it makes me feel less blah after eating it! And, if you are following a Keto diet, the cauliflower rice suggestion is a delicious nutritional accompaniment.

On a recent visit to target to get the hubby some Advil, I stumbled across a bag of Kraft Jet-Puffed pink heart marshmallows. As is my weakness, attracted to all that is pink, I had to get them because they were too pretty not to! Who does that? Whilst I was there, I stumbled across a few other fun things to sweeten up the Valentines festivities.
Brian (hubby) makes the best mussels I've had anywhere between here and France, whichever way around the world you go. This is how he does it. This recipe serves two as a main course, takes about 30 minutes to prepare and 5 minutes to cook.
This recipe is one of Brian's many specialities and one of our favorite winter meals. It's healthy, wholesome, and heart warming. Add a chunk of warm crusty bread and French butter, and that'll just about cover everyone!
